Arugula Pesto

I don’t have complete or precise measurements – this was just a “wing it” thing tonight.

Here’s what I threw in the food processer:

A couple of big handfuls (handsful?) of arugula (from the garden)
A few small bunches of basil (from the garden)
Some Italian flat-leaf parsley (from the garden)
And some oregano (from the garden)
A couple cloves of garlic, smashed and warmed in about half a cup or so…maybe less…extra virgin olive oil
Around a quarter cup or more of good aged parmigiano reggiano (okay I’m probably making a lot of spelling mistakes today – I don’t care – I’m just happy to have time to type) cheese
About the same amount of walnuts
Some salt and pepper
A few drops of lime juice (it’s the green theme going on)
And half an avocado – for creaminess and to continue the color scheme, apparently

Added some cubed cooked chicken to this just before serving over tortellini.

It’s nice to be home on maternity leave….

  1. Mmmm, that sounds yummy! You made my mouth water….which is quite a feat at 7 o’clock in the morning. Why I am up? 😉

  2. LOL, er…I guess that should be “Why am I up” not “Why I am up.” Geezus, I need some sleep! Love your website though. 🙂

  3. Kestrel,

I think “why I am up” made perfect sense…I often wonder the same thing, the same way, only lately it’s been at about 1:30 in the morning…glad you like the sound of the recipe, though, even at 7 in the morning…the pesto (w/o the pasta) would probably be interesing in an omelet, now that I think about it…hmmm…with some sauteed mushrooms maybe….

  4. may i say, as jayne’s old college housemate (not “house maid”…jayne’s hearing was off when i would pronounce this…or maybe it was my STRONG MAINE ACCENT that threw the concept of “housemate” off…)
    anyway….i digress….
may i say as jayne’s old housemate that these measurements are pure jayne. mose receipes i have from here have measurements such as “handfuls”, etc.
and she makes the best green bean dish. just ask her….she’ll make it for you.
