This is what I made for lunch today. Well, for Bill and me.
1 1/2 cups diced turkey meat
1 1/2 T mayo (more or less, to taste)
1/2 – 1 tsp chipotle Tabasco (again, to taste)
1 T chopped scallion or chives
salt and pepper to taste
8 slices of camembert or brie
2 Thomas' cranberry english muffins
And here's what you do:
Heat oven to 375 degrees F or start up the broiler
Toast the english muffins.
Combine turkey, mayo, tabasco, scallions/chives, salt and pepper.
When english muffins are done, place on a cookie sheet, top with chicken salad and two slices of camembert per english muffin.
Place in 350 oven for about 7 minutes or under the broiler for probably 2-3 – just so the camembert softens nicely.
Eat.
YUM! That looks very tasty…
This sandwich seems to be special, besides on being cute I love the way the camembert melted at the top of the muffin.
