Ricotta Coffee Cake with a Chocolate, Lemon, and Double Ginger Filling

I made this yesterday for Easter brunch at my cousin’s house. 

I’d been asked to make this coffee cake, but I didn’t have pears or pecans, and I felt rebellious, so I decided to make something different.  But still a coffee cake.

I sort of made it up as I went along.  I started with a recipe for an apple cake using ricotta cheese that I found online, and then I changed a bunch of things and ended up with this.

Fortunately I took notes.

I picked this pan because when it’s greased well, the cake will come right out with a lovely pattern.

I admit it.  I wanted a few oohs and ahhs today.  No, it’s not ALL about me…but still. 

So I made sure every crevice of this pan was well buttered.

Then I set it aside, preheated the oven, and started measuring out ingredients.

We haven’t even colored Easter eggs yet.

I know.

It’s the day before Easter.

And I’ve got to work for most of the day today, too, so my time is extremely limited.

I think Bill’s going to have to color the eggs with the kids this year, frankly.

I’ll hard boil them this morning, and then Bill can take it from there.
