I was baking and cooking up a storm last night – and while I created one storm, another one raged outside – pouring rain, thunder and lightning. Ah, Spring!
Anyway, the air was humid both inside and out, and as a result, the big front window in our living room had fogged up.
I went through that room on my way upstairs for something, and this caught my eye:
Last night we had, in addition to some scrod and rice, a great big salad.
Most of that salad came from the garden, which makes it even better.

I don’t like grocery shopping any more.
I used to.
I used to love looking at ALL the choices. So many.
So much colorful produce.
So many cuts of meat.
So much seafood.
So many different kinds of…everything.
But now I eye this all with suspicion.
I made this yesterday for Easter brunch at my cousin’s house.
I’d been asked to make this coffee cake, but I didn’t have pears or pecans, and I felt rebellious, so I decided to make something different. But still a coffee cake.
I sort of made it up as I went along. I started with a recipe for an apple cake using ricotta cheese that I found online, and then I changed a bunch of things and ended up with this.
Fortunately I took notes.
Moments ago. “Mom, you know what I think reading is? It’s like…television in your head…only…better for you.”
I picked this pan because when it’s greased well, the cake will come right out with a lovely pattern.
I admit it. I wanted a few oohs and ahhs today. No, it’s not ALL about me…but still.
So I made sure every crevice of this pan was well buttered.
Then I set it aside, preheated the oven, and started measuring out ingredients.
I hope the Easter Bunny brought you lots of chocolate, if that’s your thing. Or lots of whatever else you like. Unfortunately the Easter Bunny didn’t bring me what I wanted. More hours in the day. Ah well. I’ll have to ask Santa. Again.
We haven’t even colored Easter eggs yet.
It’s the day before Easter.
And I’ve got to work for most of the day today, too, so my time is extremely limited.
I think Bill’s going to have to color the eggs with the kids this year, frankly.
I’ll hard boil them this morning, and then Bill can take it from there.
